Mentoring Meal with Billy Peelle (C'05, History of Art and Political Science), Restaurant Entrepreneur.
From an early age, Billy Peelle was always attracted to the hospitality business, but wasn’t sure what it meant to work in the field, or what exactly he would do within it. While many would consider a more directly-connected vocational education, Billy fell in love with Penn, and felt that having a broader education would be more valuable in the long run. He pursued various internships while in college, including one at the Ritz Carlton in Philadelphia.
Upon graduating from Penn with degrees in Art History and Political Science, he went to work for Ritz Carlton, where, for over three years, he rotated through several departments ranging from housekeeping to management, eventually putting him in a role that oversaw a large-scale renovation of the three-hundred room hotel. It was after this experience that he realized he wanted to pursue his career in the hospitality industry, but on a smaller and more intimate scale and identified the restaurant industry as a logical choice. He moved to New York and attended a culinary school. In 2008, he joined the team of Eleven Madison Park as a kitchen server and moved through the ranks to Captain, while the restaurant earned much acclaim including 4 Stars from the New York Times, 3 Michelin Stars, 5 James Beard Awards (including Most Outstanding Restaurant in America), and one of the Top 10 Restaurants in the World according to the San Pellegrino List. In 2012, he left to open NoMad, the critically acclaimed restaurant and hotel with Chef Daniel Humm and Will Guidara, before moving back to Eleven Madison Park later that year to help the team as it transitioned into a new style and format.
Billy is sure his parents have wondered "what the heck is he doing?" on many occasions, but he is pursuing something he loves, despite being hard work, and would like to talk about these experiences with students who are interested in hospitality, or perhaps other industries that Penn students don’t traditionally pursue.
